Leider haben wir das Feinschneiden nicht mehr im Hause.

Vorbereitung: Den Pumpernickel in feine Scheiben schneiden. Lachs von bester Qualität und frische von Hand feinschneiden und zu kleinen Médaillons formen und ca. 30 Minuten im Kühlschrank durchkühlen lassen Zubereitung: Oel unter den Lachs mischen, vorsichtig mit Salz, weissem Pfeffer und ein paar Tropfen Zitronensaft würzen. Pumpernickel in Butter ansautieren und mit Meersalz würzen. Mit Toastbrot, Cherry Tomaten und einem Dillzweiglein servieren.
