Linolensäure

α-Linolensäure, die hauptsächlich in Pflanzen, u.a. in Leinsamen, in hohen Konzentrationen vorkommt [Franke 1997] ist für den Menschen essentiell. Sie kann in menschlichen Zellen zu den phy¬siologisch wichtigen längerkettigen, hochungesättigten ω-3-Fettsäuren verlängert wer¬den [Brenna 2002]. Da dies jedoch nur zu einem geringen Prozentsatz erfolgt, sind die längerkettigen PUFAs als „semiessentiell“ anzusehen [Ackman 2004]. ω-3-Fettsäuren nehmen viele verschie-dene Funk¬ti¬onen im Körper wahr: So bildet Docosahexaensäure beispielsweise einen wichtigen Bestand¬teil der Phospholipide der Membrane in Retinalrezeptoren. Eicosapentaensäure gilt als Vorstufe für Eicosanoide, hormonähnlichen Verbindungen wie Leucotrienen oder Thromboxanen [Shahidi et al. 1997].
