Im wesentlichen wasserunlösliches, mit Kationen komplexiertes, anionisches Polysaccharid gemäß Anspruch 3, worin die carboxylierten Polysaccharide ausgewählt sind aus Alginaten, Pektinen, Gummi arabicum, Karaya, Tragacanth-Harz, Ghatti, Psyllium, Leinsamen, Okra, Xanthan, Gellan, Carboxymethylcellulose, Carboxymethylguar, Carboxymethylstärke und Hyaluronsäure; die sulfatisierten Polysaccharide ausgewählt sind aus Carrageenan, Heparin, Chondroitinsulfat, Dermatansulfat, Heparansulfat, Keratansulfat, Keratan und Cellulosesulfat; und die phosphatierten Polysaccharide ausgewählt sind aus phosphatierter Cellulose, phosphatierter Stärke und phosphatiertem Glucan.
