Dieser Brauch erfordert frisches, zartes Gemüse und ausgezeichnetes Olivenöl und ist vielleicht gerade deshalb typisch für die Toskana, wo man jede Gemüsesorte in Pinzimonio eingetaucht isst: von den Artischocken bis hin zu den Karotten, vom Fenchel bis hin zum Sellerie, von Radieschen jeder Art bis hin zum Porree, zu den Zwiebelchen usw. usw. Der Brauch des Pinzimonio ist sehr alt und war sicher bereits auf den großen Banketten der Renaissance verbreitet, als die Tabletts der einzelnen Gänge wahre Triumphe waren und in tausenderlei Weise geschmückt wurden, auch mit Obst und Gemüse. Erst nur eine schmückende Funktion innehabend übernahm das Gemüse bald eine Speisefunktion: es wurde zum Abschluss des Mahls verzehrt, jedoch eingetaucht in die Saucen für das Fleisch, das es geschmückt hatte.
