Flocks must be composed exclusively of sheep belonging to the Barégeoise breed. Genetic selection must be in keeping with the practices employed in the free mountain pasture. The whole flock present on the holding must comply with the PDO product specification. Each flock should contain at least one Barégeoise ram per 50 ewes and must include a minimum of 20% "doublon" castrated males of all age ranges in relation to the number of ewes. The farmer keeps replacement ewe lambs originating from his flock equivalent to a minimum of 30% of the number of ewes. Each animal must spend at least 12 months in the flock of the holding. Tupping must be allowed to take place naturally. Castration is performed after the descent of the testicles into the scrotum.

Die Herden dürfen nur aus Schafen der Rasse "Barèges" bestehen. Die genetische Auswahl muss den Praktiken der Sommerweidehaltung in Freiheit entsprechen. Die im Betrieb gehaltene Schafsherde muss in ihrer Gesamtheit der Spezifikation der Ursprungsbezeichnung entsprechen. In jeder Herde müssen je 50 Mutterschafen mindestens ein Widder der Rasse "Barèges" sowie im Verhältnis zum Gesamtbestand an Mutterschafen mindestens 20% kastrierte männliche Tiere ("Doublons") sämtlicher Altersgruppen vorhanden sein. Der Züchter hält die aus seiner eigenen Herde stammenden, für die Bestandserneuerung bestimmten weiblichen Lämmer in einem Anteil von mindestens 30% der Anzahl der Mutterschafe. Sämtliche Tiere müssen sich mindestens 12 Monate lang ständig im Bestand des Betriebs befinden. Das Decken muss auf natürlichem Wege erfolgen. Die Kastrierung erfolgt nach dem Absenken der Hoden in den Hodensack.

Most holdings (86%) rearing the Latxa breed of lamb practise transterminance, involving small movements between the valley and nearby mountains. This system is based on making use of common mountain pasture in summer and autumn, of meadows in October and November, and then on staying on the holding for the rest of the year, wher the diet is supplemented by dried fodder (alfalfa hay, grass or vetch-oats) and natural feed (cereals and pulses).

Die meisten Betriebe, in denen Schafe der Rasse Lacha gehalten werden (86%), betreiben eine Art der Wandertierhaltung ("Transterminancia"), bei der die Tiere kurze Strecken zwischen dem Tal und den nahe gelegenen Bergen zurücklegen. Dabei weiden die Tiere im Sommer und im Herbst auf den gemeindeeigenen Almen, im Oktober und November auf den Wiesen und bleiben den Rest des Jahres in den Betrieben, wo sie mit Silage (Luzerneheu, Gras, Wicke, Hafer) oder natürlichem Mischfutter (Getreide und Leguminosen) ernährt werden.
