Beschreibung: Räucherwurst aus Schweinefleisch der Bísaro-Rasse oder mit dieser Rasse gekreuzter Tiere, die mindestens 50% Bísaro-Blut aufweisen, in Dickdarm vom Schwein; sie ist gerade und zylinderförmig, etwa 4 bis 8 cm dick, 10 bis 20 cm lang und von hellbrauner Farbe. Gewürzt wird das Fleisch mit Salz, Knoblauch, Rot-oder Weißwein, scharfem Paprika (regional als "Pimento" bezeichnet) und/oder süßem Paprika ("Pimentão"). Die Wursthaut haftet gut an der Masse und ist faltenfrei.

Description: A smoked sausage, made from the meat of the Bisaro breed of pig or of cross-breeds that must be 50% Bisaro, stuffed into hog casings (large intestine).
