Sobald die Sublimation des Wasserdampfes aus dem gefrorenen Material einsetzt, wird dem Material Wärme entzogen und es damit weiter gekühlt. Dem gegenüber wird durch Umgebungswärme die notwendige Sublimationsenergie in das Produkt eingetragen. Die unter Vakuum bei der Trocknung ausgetriebene Feuchtigkeit wird an dem sehr kalten Eiskondensator angefroren. Die Vakuumpumpe hat lediglich die Aufgabe, die Luft aus der Trockenkammer zu entfernen, nicht aber den ausgetriebenen Dampf abzupumpen.
