Beschreibung: Räucherwurst aus Schweinefleisch der Bísaro-Rasse oder mit dieser Rasse gekreuzter Tiere, die mindestens 50% Bísaro-Blut aufweisen, in Dickdarm vom Schwein; sie ist gerade und zylinderförmig, etwa 4 bis 8 cm dick, 10 bis 20 cm lang und von hellbrauner Farbe. Gewürzt wird das Fleisch mit Salz, Knoblauch, Rot-oder Weißwein, scharfem Paprika (regional als "Pimento" bezeichnet) und/oder süßem Paprika ("Pimentão"). Die Wursthaut haftet gut an der Masse und ist faltenfrei.

Description: A smoked sausage, made from the meat of the Bisaro breed of pig or of cross-breeds that must be 50% Bisaro, stuffed into hog casings (large intestine). The sausage is shaped like a straight cylinder approximately 4 to 8 cm in diameter and 10 to 20 cm in length. It is light brown in colour. The meats are seasoned with salt, garlic, red or white wine, powdered chilli pepper (regionally known as "pimento") and powdered red bell pepper (or "pimentão"). The casing is tightly wrapped around the filling and must be unbroken.

Gewürzt wird das Schweinefleisch und -fett mit Salz, Knoblauch, Rot-oder Weißwein aus der Region Trás-os-Montes, scharfem Paprika (regional als "Pimento" bezeichnet) und/oder süßem Paprika ("Pimentão"). Sie hat die Form eines Hufeisens, sie ist zylinderförmig, etwa 3 cm dick und 25 bis 35 cm lang; ihre Farbe wechselt von rot bis kastanienbraun und ist fleckig, Fettstücke sind erkennbar. Die Wursthaut haftet gut an der Masse und ist faltenfrei. Sie wird mit nur einem Baumwollfaden an jedem Ende durch zwei einfache Knoten zusammengebunden.

The pig meat and fat are seasoned with salt, garlic, red or white wine from the Trás-os-Montes region, powdered chilli pepper (regionally known as "pimento") and/or powdered red bell pepper (or "pimentão"). The sausage is shaped like a horseshoe, is between 25 and 35 cm in length and has a cylindrical section of approximately 3 cm in diameter. It varies from red to brown in colour and is spotted, as the pieces of fat are visible. The casing is wrapped tightly around the filling and is unbroken. The casing used is tied shut with two simple knots at each end, using a single piece of cotton twine.
